This wavy, chocolate croissant cake has a wonderful flakiness and is made with our double chocolate croissant. It’s filled with a homemade hazelnut cream and topped with hazelnut cream and toasted hazelnuts.
The dough takes two days to prepare — created with a 12-hour cocoa poolish and laminated with Isigny French butter 82%.
